Irish (or white) potatoes are an important part of the American diet with the typical American consuming approximately 135 pounds per year — more than any other vegetable. Potatoes are also the most economically significant crop in the U.S. produce industry, earning farmers $3.1 billion in 2002 and accounting for 15% of all vegetable receipts. Potato products such as frozen fries and potato chips generate billions in additional revenue for the food processing and foodservice industries.

History
Did you know potatoes were first cultivated around 200 B.C. by the Inca Indians? The first North American potato patches were established in New England around 1719 by Scotch-Irish immigrants who were accustomed to potatoes as daily fare. Here you will find potato history information.
